Cindy De Mayo Guacamole

This is the famous receipt that my mother created while we were growing up. My Mom, Cindy, was Born on May 5th, Cinco De Mayo...but it has grown to be called Cindy De Mayo in our town in memory of her. 

Being from an area where 9 out of 10 restaurants are Mexican, you learn to love spicy food. My Mother cooked dinner every night growing up, and at every holiday we had guacamole and chips as an appetizer. We took this to every potluck, school party and  sleepover that we had. We all obsess over this guacamole and still make it whenever we get the chance. My hubby and I actually crave it sometimes and will eat it for dinner (healthy, right?!?) each of me and my sisters make it a little different and will give you some suggestions.

Ingredients:
Avocados
Chinese chilie
Garlic powder
onion powder
onion flakes
mayo (optional)
Salsa or green chilie (optional)

How to make:
1. pit the avocados, smash in bowl 
( we used 3 medium ones)
2. combine garlic powder, flakes, onion powder
3. mix in mayo, chilie and salsa
4. enjoy with chips, on flajitas or a turkey burger



We intended to eat this as an appitizer since we skipped lunch while working on the house... but we ate it so fast we skipped dinner too. 

Suggestions:
1. My husband likes his with some citrius, so he adds some lemon juice to his, as well as salt
2. my sister eats very healthy, so she skips the mayo and it tastes almost the same. We mostly use mayo as a filler to make it go further, same with the salsa
3. i have a friend who likes it chuncky so she adds some tomatos and green chilie chuckys.
